Check this: we had a potluck at work (people bring a ridiculous amount of food to work) and someone brought some of the best dip I've ever had.

One pound breakfast sausage (the tube kind like farmland or jimmy dean)
One 8oz package of cream cheese
One can (16oz?) of Rotel Chili

Put it in a crock pot and heat. Super easy, cheap, and can use tortilla chips to dip. It smells and tastes like the kind of sausage gravy you put on biscuits, and it's ridiculous good.

I make a dip almost exactly like that, except it's Rotel tomatoes instead of chili. It is fantastic, I'll have to give the chili a try next time I make it.

Actually yeah, it is the tomatoes. I got confused I think because last time I bought velveeta and chili to make for the super bowl, it was labeled as chili. It was tomato though. I think chili with the sausage would be overkill. It's damn good isn't it?

You might try it with sour cream, marscapone or even cottage cheese, if any of those sound tastier. Melted asadero could work too.

It is delicious. Sadly, not many of my friends like it (I think due to the cream cheese), but it's still my staple dish for a potluck or sports-watching party.

I may just try it with velveta (and maybe a small jar of salsa blended in if that's too rich). I hate sour cream and cottage cheese too. There is a whole big world of dairy that doesn't agree with me.

Velveeta works just fine, that's what I use when I want a regular yellow cheese dip. And actually, my mom's recipe for cheese dip involves adding a jar of Old English cheese in there (in addition to the velveeta), so feel free to try that as well.
