Just a question are there any quests or items that will give you a skinning skill of 375 +.

If I remember right there was a dagger from UBRS and a sword from ZG? Its been a while. To my knowledge there is nothing at lvl 70 that gives you a plus, nor is there anything that needs over 375 skinning to skin.
Finkle's Skinner and a gloves enchantment were used to boost 300 level skinning to the maximum possible of 315 before TBC. I didn't think there are any mobs in TBC that required skinning ability over 375.
