Can skinning be leveled past 300 and if so how? Is there a special skinning quest available? I'm Alliance btw.

All Skills can currently be leveled to 375. You have to go to the Outlands to see the correct trainers

Also, think you need to be level 50 and have the expansion pack.

Master (maximum skill 375) skinning can be learned in the Lower City section of Shattrath. Easiest way to describe where the trainer is it's in the area not far from the Scryer bank where you'll find various venders, the quartermaster and the tailoring specialty trainers.

My lv 47 Rogue just trained in Master Skinning, increasing possible skill to 375, so you must not need to be lv 50 for gahtering professions. Cost was 10 gold in Shatt.
