I think it's a good idea. I'm a Hunter and I started out Skinning. I wish I had picked up Mining in the beginning as well, but I just recently started that. I've never had to go out of my way to skill-up Skinning. The skill levels come easily as long as you skin all skinnable mobs that you kill for EXP. I actually had to go to Shatt in my high 40's or low 50's (forgot what level exactly) to raise my skinning skill cap to 375. I'm at 340-350 now and I've never been on a 'skinning run' because my skill was too low. Gold doesn't come in vast amounts, but it's steady and it adds up over time.
Mining is another good one, but I you may have to go out of your way sometimes to skill it up if you want to keep your Mining skill level to where you can mine in areas where you EXP. I can't say for sure as I didn't do this, but the skill ups seem to come at a slower rate than Skinning because there are fewer veins/deposits than there are mobs to kill and skin. It's still nice though.
I know you said you want to do Enchanting and something else, but Skinning and Mining together is a very nice route to go for a Hunter and you can always level Enchanting on another character (which is what I'll eventually do). You can make a fair amount of coin this way. I'd probably have 3-4 times the gold I have now at Lv57 if I took Mining with Skinning when I started (I probably have 800g and I spend gold like my girlfriend uses her credit card at the local mall).
You can do these skills as you EXP grind on Hunter (or any solo job) which is a time-saver. Time = money, time = EXP and the more time you can spend in the field multitasking instead of in town skilling up another trade skill is a definite plus. Yea, it'd be nice to disenchant quest items and all, but there are only so many quest items (a lot, but still finite) to d/e and the mobs to skin and nodes to mine are infinite. Most quest items sell for a nice price at the vendor anyway. I plan on doing all or most crafts eventually on different toons. My Hunter/gatherer will supply me what I need for at least a couple of professions so I'll always have the supply I need.
As far as the Find Minerals ability interfering with a Hunter's tracking abilities, I've not had that problem. The tracking abilities are nice to have on at all times and have a few nice uses, but not needed. They help out if you're looking for a specific mob or mob type for a quest, but you can always click whatever tracker you need ever few yards. But, if that is the case, then it's likely you're not mining anyway. I run around with my trackers in a new area while I'm exploring a new zone but after that I use Find Minerals pretty much exclusively.
