I know, I know...but this is more of a money based question.
At lvl 25 undead mage, should I drop my 112 skinning and start d/e for profit? Or should I just wait till later on when I'm a higher level?
Any advice is appreciated.

D/E depends on your server's market as to whether or not it's a viable money maker. It was on my server for a while but has become extremely unstable. If the market can support it, it's a great money maker that doesn't require you to go out and kill things to gather materials.
Have a look on AH at the enchanting mats.
If things like strange dust, lesser magic essences are over 1g50 per stack and small glimmering shards are over 90s each it will likely be profitable.
You could always install enchantrix and have a scout through the AH checking D/E values of greens.
