Currently I have skinning and mining - because I like being rich. But the market for daggers (I'm a rogue) on my server sucks dark human orifices. I'm considering dropping skinning to pick up blacksmithing, so I can at least keep myself decently equipped.
Would the switch be worth it? Or would I be better off hording money from my gathering skills and keeping a very watchful eye on the AH for good gear?

I would recommend that you just keep a good eye out.
Reason is is that if you dump skinning and take up BS you'll forfeit all that money you made just to get to where you need to be to make the weapons that you would like. And, thinking farther ahead, do you really see any patterns for weapons you may like above journeyman/ expert? For a dagger rogue I would hesitate to say yes.
Good daggers are always hard to find for a rogue, they always have been. My suggestion is to look in the loot tables and see if there are any static drop daggers you may like, if not look in the craftables and find a friend who can make one..worse comes to worse you just go with it and eventually one will drop for you. And once you get to OL I know there are plenty of daggers out there a rogue would love. ^^
