Have gotten my fishing to 325 but it's going kind of rough - are there any threads or guides on the progression of fishing spots one should follow to get to 375?

You can go back to the newbie starting areas to skill up to 375. Skill ups are based on # of successful catches, not the difficulty of the zone.
Fishing in the Outlands is going to require fishing lures, unless you are at 375 and are fishing in Zangarmarsh. The other zones like Nagrand and Terokkar necessitate a +75 or +100 fishing skill lure. I wouldn't waste my time going back to Azeroth to skill up -- buy some lures and make sure you have the best fishing pole available. Check the Trade Skills FAQ for more help.
KK - was hoping there were some progressive lakes or pools I could work to get better fish, but as a kitty druid, I like the mudfish, so I guess it's not too bad.
