I can't comment on jewelcrafting, as I've never done it. But it's the hot new profession. Also, you don't need to pick up mining with your alt to do jewelcrafting. Your main is already a miner.
I'd say there's no point doing tailoring. Neither your shaman nor your warrior wear cloth armor. If you are after bags, just buy them. The cloths (which sells for a lot on AH) you waste leveling tailoring will buy you more bags then you'd need. And you get the larger bags a lot quicker as well. As an example, netherweave bags (16 slot) sell for 9g each on my server. My husband's tailor can only make mageweave bags (12 slot) at moment. (We are level 48). I can easily afford to replace all my bags with netherweave ones, but I can't as it'd hurt his feelings :)
Enchanting can make you money if you use it as a gathering profession (see elsewhere on this forum). If you are after crafting stuff for disenchanting, then pick leatherworking or blacksmithing instead of tailoring. You have skinning and mining on your main, which will supply mats for the two crafts. Also, you can make things you actually will wear. I've heard leatherworking is cheaper than blacksmithing, but I don't have first hand experience. On the other hand, your main is a warrior, which means blacksmithing will supply your main.
