I am an expert skinner but I'm not sure how to take full advantage of my abilities, how do I make the big g's with skinning, any info would be highly appreciated=)
You honestly don't, best part about skinning is during your grinds you can pick up skins, rather than running to a node. So you often end up with large amounts of leather that you can either auction off or sell to vendor, I did sell to vendor with my skinner and still managed to pick up my mount at 40.
I don't know how much cured rugged hides sell for though, looks like it could go for a good amount considering the cooldown on the saltshaker is 3 days. And of course certain leathers are worth more than others, but thats more server dependent.

I am an enchanter...i know, i know, money pit, but I need a supplemental income to make up for the loss in g for the enchanting.....help!?!?!?!?

How consistent and speedy of an income can fishing be?
Money making fish - sell on the AH:
Deviate Fish
Oily Blackmouth
Firefin Snappers
Stonescale Eels
Winter Squid
When fishing also look for floating debris, this will contain a chest with loot in it.
When fishing use the best lures you can use.

you caqn also use your enchanting to disenchant the cheap items on AH and resell the dusts etc..made me tons of cash

I dropped skinning a short while after hitting level 60. It was great while leveling but I decided to go herb/mining to complement fishing. 3 harvesting professions = good stream of funds.
Skinning wasn't much of a money-maker for me. About the only thing of substantial value is Pristine Hide of the Beast, but you'd have to be crazy to specifically farm for it (rolling issues aside).

It depends on your skill, your level, and where you fish.
a level 5 Night elf can get to Menethil Harbor with 100 fishing skill and make 5-6 G/hour.
a level 25 (any race) with 225 fishing skill can get to Tanaris and fish the coast to make 15-20 G/hour
a higher level can go to Azhara with 300 skill (plus heavy-duty lures) and make 30-40 G/hour.
