i know that straight proffesions are bad for making money (eg, skinning for leatherworking) so what is the best combination of proffessions to make money?
basically i have a sinkhole enchanter i need to flood with gold....
any suggestions?

Two gathering skills is best, I agree. But if a player insistes on having production skills, then fishing becomes imperative as the only way to support an expensive tradeskill that uses everything you gather and still needs more.

Skinning + Mining till level 40, then Skinning + Herbalism til 60. Then Herbalism + Alchemy. Also buy the biggest bags you can.
