If your primary focus is PvP, Engineering is very useful for any class.
The second profession depends on your other (if any) characters. If you don't have any other characters, then Mining is useful for feeding Engineering. You will still need to buy leather and other materials, but most of the Engineering mats are mined.
If you do have other characters, then there are several options:
Skinning or Herbalism are good moneymakers
Tailoring can be used to make a few nice items, but is not the best skill for your first character.
Enchanting can be nice for disenchanting soulbound items and selling the mats on the auction house. You can also enchant your own gear and sell enchants at later levels.
Alchemy is nice, but only if you take Herbalism as well. For PvP, I would prefer Engineering over this combination.
Leatherworking is pretty useless for a mage.
Remember to level your secondary skills as well. First aid is critical in battlegrounds, fishing can be an excellent source of income, and cooking can be used for creating food that provides buffs.
