For your first character I would advice you to have two Gathering Skills. Herbalism, Skinning or Mining. The thing about Skinning, is that it does not require you to have a tracker on. (Tracking works so that when you track herbs they show on your minimap, same with mining nodes). So either you could choose Mining/ Herbalism, and have to switch trackers once in a while, (only one tracker can be active at any one point) or you could choose mining/skinning or Herbalism/Skinning.
This will enable you to track the herb/mining nodes at all times, without worrying about missing nodes of the other kind.
The reason for having two gathering skills on your first character is that crafting professions rarely make you much money in the first levels. Even when you reach skilllevel 300 at your crafting skill, it still takes alot of money to MAKE money. Gathering skills cost you nothing, and makes you a decent profit. This is necessary for you if you want to have an easy time on the AH, and with vendors. There are alot of things that will cost you alot of money, and if you blow it all on a Crafting Profession, you will sit there broke.
Do not under any circumstance think that Enchanting is much of a moneymakers craft until it hits 300. And still then it is an expensive craft. Not recommended at all for your first character unless you plan on just disenchanting items and selling the shards/dust you get from them.
