I found the skinning trainer in Darnassus, but she only will sell me shields, not teach me skinning. Any tips on where to go/how to get her to let me train?

That would be a vendor, not a trainer. It will say in her tag <Skinning Trainer>. Look again; usually NPCs group together

It clearly stated that she was a skinning trainer. I forgot her name but it said Skinning Trainer. The Sentinels even pointed me to her.

The skinning trainer is not in Darnassus. It's outside of town in a little cottage by the road.
Actually, she used to be a trainer (I know because she trained me), but yeah, she's been selling shields since the last really big patch.

I have never trained at her, and my first Night Elf character (dear god that is a long time ago) trained skinning at the hut outside Darnassus.
Then again, you might be right. Just because I never used her, it might have been two skinning trainers that close to eachother.

I'm a new player just started skinning and thought while we were on the subject where is a skinning or leatherworking trainer in the Human/ Dwarven areas?
The main towns (Darn/IF/SW) have the trainers for Skinning/Leatherworking along with the other trades (with a few acceptions). Small towns sometimes have higher level trainers of a certain profession, but just for starts if you're a human head to Stormwind, if you're a dwarf, head to Ironforge.
Xanskar, I noticed the same thing you did. The guards in town gave me her name, she has <skinning trainer> over her head large as life, and doesn't have any option for actually training skinning.
If anyone knows the name of the skinning trainer outside of town, could you post it?
