I have a few characters that need to finish leveling up their fishing. I could do so by fishing up eels. I also have an alchemist on my account. Which sells better, stonescale eels or stonescale oil?

Usualy it dosent matter one bit, since they only "Had" one use, but now that Craftsman's Writ - Stonescale Eel has been added, they have value in there unrefirend form. I say Eel andnot oil.

On Earthen Ring:

Before 1.11, ten eels would sell for 12 gold and ten oils for 17 (a crafty lowbie alchemist could turn a healthy profit without ever fishing).

Post 1.11, the costs have equalized with ten eels/oils selling for 9 gold (although the writ asks for twenty eels...so full stacks might sell quicker, albeit for similar profit). Mainly due to overproduction, IMO.

Why the overproduction? Two-fold. There's a new use for them and they school up, now. If prices spiked, I missed it. All I noticed were greater supplies and lower costs. Which means that people with non-writ uses for the eels, making oil or superior defense potions, have seen the prices of those items fall in concert with eel prices.

Of course, what's happening on your server can be entirely different.

If you have the storage, I'd consider holding the eels until later, and dribbling them into the market rather than flooding it.

On Shadow Council, the stonescale eels sell for about 17g for a stack of 20. The stonescale oil still sells for about 25-29g for a stack. The lesson here is that it's important to check YOUR server's economy. I fish up stonescale eels in Feathermoon every night and immediately turn them into oil. Sometimes, if I just need a quick influx of cash, I'll buy the eels straight off the Auction House and put them back up immediately as oil. The eels sell more quickly than the oil on my server, but the oil sells for more money. So, check your nearest AH and see how many of each are on auction and how much they're selling for before you decide.

Also watch for changes over time. Lots of eels for sale, but no oils? Oils will sell faster. And vice versa. Add superior defense potions into the mix, too, while you're at it. Look for shortages and take advantage when you can.

Prices will vary from server to server but on Gul'Dan:

Stonescale Eel [x20] ==> 13-16g [ave 15g]
Stonescale Oil [x10] ==> 13-20g [ave 15g]

A very nice and easy way to double your money in most cases. Although, the prices vary within the server also with supply and demand. In most cases though, I would say Stonescale Oil would sell for a nice profit.
