But I have never failed to skin a creature. The worst result I've ever experienced is getting scraps. And I think I had skill increases on results of scraps.
So I'd think you would just hunt the highest level skinnable creatures you can kill until your skinning skill catches up (earning better XP and loot in the process).
Am I missing something?

You can only skill enemies whose levels are equal or below your skinning level / 5. In other words, at 200 skill you can skin a level 40 enemy, but not a level 42 enemy... you'd need 210 skill for that. Since you haven't been killing things more than around 5+ levels higher than you, your skinning skill is higher than the enemies you are fighting. Something with a very high level will be RED to you and you can't skin it.
