Ima 49 NE hunter on Malfurion and i currently have Skinning 300/300 and mining is like 244/300. I was thinking what should i take up, LW or BS (Eng is also an option, i dont mind deathrays).In LW u got dragonscale stuff and in BS u got arcanite weps and such. Ive kept these for the sole purpose to money making, and now that i have 250g im quite happy.
Leatherworking, particularly Dragonscale, is more suited to a Hunter, since you can make yourself armor. However, as far as money making goes they are probably equal (you just have to find your niche... there is one in every profession). Only take up Engineering if you PvP a lot.
