Every monster has a very small chance to drop a myriad of items. No one monster has a better chance than another, barring some special "monster X only drops" (like the certain daggers that drop off the Venom Spiders and Pygmy Venom Spiders in Duskwood, for example).

If you need something your level to skin, try Alterac. I believe the yeti around there are around your level (or a little lower).

Around level 37, I was grinding in STV and skinning everything I found. The raptors and apes are especially good. The apes are easy to kill and also skinnable. The raptors drop items you can use to skillup cooking and/or leatherworking, and are also skinnable. As a bonus, there are quests to kill some of these mobs if you haven't already done them (Nessingwary's camp and the Mastery quests come to mind). I found my first world drop epic item while grinding/questing in STV. Sweet deal.

A good place to Farm is the coast of Dustwallow Marsh north of Theranore. They drop fairly decent stuff and you can skin them for Heavy Leather, Thick Leather, and Turtle scales. You should also be able to level to 40 just by grinding them.

On a PVE server, STV is the best. But STV is a PvP hotspot. On PVP server, Dustwallow marsh along coast is good for alliance and Badlands is good for horde.
