I got Skinning (286) and Enchanting (102, just changed from Leatherworking) and my question is; should I change too Engineering and Mining?

Depends on what you wish to gain from the professions.... If your main gain is to make as much money as you can, then engineering is a far from ideal choice as it is more geared towards making fun gizmos and contraptions. However if you are just looking to glean some fun from the game then engineering is a great choice in my opinion :)

If you objective is cash, dont even think about it(though their are some huge money makers), if your goal is to blow the crap out of stuff, then yes it is good.

I've got my engineering up to 240 now and it has been a real hoot. Not only is the stuff you make cool, but pretty darn handy. Big bombs and target dummies having gotten me out of a pinch many times.
