Why is leatherworking training always greyed out for me? I don't get it? I have a zillion leather hides that I've had to sell because I can do nothing with them. Am I missing something obvious?

What do you mean by greyed out? And what exactly is greyed out, the stuff on the trainer screen or your leather recipes? If it's your leather recipes, talk to your trainer to get new recipes.
You need to learn New more difficult stuff to make, IE visite the trainer.

I went to the leather trainer Kamari in Org. The only thing available (in green) is apprentice leatherworking. It requires L5, (I'm 30) and cost 9 bronze. The 'train' option is greyed and the only active selection is 'exit'.
I haven't been able to 'make' anything yet.

well, we know then that you haven't bought the leatherworking skill. but as for going to the trainer and not being able to learn it, perhaps you already have 2 tradeskills? in that case you need to unlearn one of them.
hopefully you're at least selling the hides at the local AH then till we figure this out. let us know what else might be the case if the above didnt solve it.
