Really, for the first several levels until you get to iron you're just going to want to farm around rocky areas in the noob zones (lvl 1-20 areas). You'll find copper, tin, a bit of iron in the higher areas, silver, and gold. Alternatively you can also buy copper ore off the AH and smelt it to get a skill up. I'm not sure when smelting stops giving you a skill up, but it's somewhere around when you can mine iron. Also, even after that point gold ore will give you skill ups when mining. Stone tallon mountains and 1k needles have a good array of minerals up to and including small amounts of mithril. However, since you're 60, once you hit iron go directly to the badlands and run circles around the outer part of the map. There is a TON of iron and mithril here, with rare spawns of gold and truesilver. Just mount up and run around. You'll level up to mithril fairly fast from collecting all that iron and then you can continue in the same place until you can mine thorium. Also, until you can do mithril, I recomend not bothering going back where the elite draggons are (I believe this is the far east side of the map if memory serves). There are several mithril spawns back there, but no iron IIRC. Once you get to small thorium, go to the next set of zones - blasted lands is pretty good IIRC. And then after that any of the highest level zones (EP, Azhara, sith, etc... ) will have mithril, small thorium, large thorium. To be honest, once you get familiar with an area most of them have decent resources. Badlands is the only one that sticks out in my head as being absolutely great. You are always going to have to consider how many people are farming, and if on a PvP server, the likelyhood of you getting ganked.
