That all depends on what you want to do. Do you want to make money? Do you want to make items you can wear yourself? Do you want to be able to buff yourself with potions?

Once you know what you want your professions to do for you, you can pick the right ones.

I'm not too sure what would be best for a Shaman.

There is always herbalism/alchemy - to make potions and you can always sell the herbs you don't use.

Or mining/blacksmithing - hard to lvl up but you can make some nice money-making things later on and make some things for yourself since Shamans can wear mail.

Or mining/engineering - if you want an interesting combo, they can make some interesting items. Though this one is a money drainer as only engineers can use most engineering items.

Those would be my suggestions, but it really is up to you. Do professions you will enjoy, otherwise you will find it tedious and not much fun.
