Selling stacks of Stonescale Eels
Selling Greater Stoneshield Potion
Or selling stacks of Elixir of Superior Defense
Just wondering how to best profit from the large amount of stonescale that I am pulling in.

Stonescale eels sell very nicely in stacks on my server. One of the big reasons is that ten eels are required in the Flask of the Titans recipe. That's ten eels *per flask*. If you're on a server where the high-end content is being attacked frequently, eels will sell well.
It's the same as most crafts. The materials normally sell better and faster than the product. You could be narrowing your market by turning eels, which can be used in several things for different reasons, into one single thing with a single purpose. That said, I think things will vary from server to server and day to day. You just have to watch the market and go with the flow. If you're like me and don't really care to keep tabs on everything in the AH all of the time, then selling the eels would probably be the best bet.
Back in the day when I was 300 alch/herb/fish on my old Horde Shaman I made more money on the eels than converting to potions.
