There's plenty of advice on this quest under the quest description on both this site and thottbot.com. They'll tell you exactly what to do. It is not a difficult quest, just a bit of traveling and maybe avoiding aggro depending on your level.

You can't fail the quest, just make sure to do some fishing before you log out to get one more skill point. I personally logged off with my fishing pole still equipped, which I guess bumped my skill 5 points and kept me safe from the bug.

All the secondary skills have a chance to permanently cap your skill at 225 after successfully finishing the quest if you don't immediately get your skill to 226 or higher, that's what everyone was talking about. People who have gotten that bug have been unable to get any help or acknowledgement from GMs other than "sucks to be you."

What Krylanna said.

I’ve spoken with and/or read posts from people who have their cooking or first aid skills caped at 225 even though they have successfully completed the artisan quest. And yes, the general consensus is to gain at least one more skill point after completing the quest before logging off. I’ve never heard of it happening to fishing before, but since it too is a secondary profession it wouldn’t hurt to take the same precaution.

As for the fish, just take them both. It shouldn’t be any big deal. Though all you really need are the quest fish. As long as you have the fish you were asked to catch then you’ll be able to complete the quest. The only problem I had was getting to the beach in the Swamp of Sorrow. There were a lot of higher level elite mobs in the zone and they were packed in fairly close together. Thankfully I was a rogue and I stealthed through much of it. But my alts will be doing that quest soon, so it should prove interesting.
