Yes that might be the best however you can only track one at a time.
You can unlearn a profession, but you lose all your training. It seems better to just make another char to do the other profession than to erase what you have learned, unless you just started, or for some reason hate it.

I decided to go mining/engeneering for guns and ammo. I like it a ton, but mining makes good cash but ngeneering doesn't sell
