No More MargarineFollow

The FDA is banning all trans fats by taking them out of the "generally recognized as safe" category.

That means companies would have to prove scientifically that partially hydrogenated oils are safe to eat, a very high hurdle given that scientific literature overwhelmingly shows the contrary. The Institute of Medicine has concluded that there is no safe level for consumption of artificial trans fats.


I switched back to real butter some time ago. This is good news, I think.

Sucks for movie theaters! I remember back in high school a friend of mine confided that the "100% real butter!" used on popcorn is actually "100% partially hydrogenated soybean oil."

I was surprised to learn that in some climates it's considered fine and acceptable to leave your butter out in the butter dish at room temperature. I think it would melt here in the summer, but I'm tempted to get a real butter dish someday and try it.

It does melt.

Ideally though butter is served at room temperature, and stored in the fridge. When I spoil myself and get butter for bagels I just put it in the fridge at night, and take it out with the morning coffee. Sometimes I forget and wake up to semi hard butter puddles (it cools at night.)

If you have AC or CA, and don't leave it in sunpots it generally stays a semisoft block, in the sense it can spread easily but isn't drippy.

Caring for butter is tough work.

Which is why its a scam. Butter companies are worried about losing market share to Canada, who is going to have access to EU butter if the trade deal goes through. Y'all are getting hosed out of margarine because Euro competition in Canada will push Canada competition in America. But its cool, most of 'Murika is to fat already.

Just spread bacon grease on ice cream or something .....

I worked briefly in the analytic lab at Land-o-lakes food. One of my tests required I determine the pH of the ash of various spreads. I don't know if it was the lecithin or the glycerides or what, but the more synthetic the spread the harder time I had cooking it into an ash i could even use in titratation. It was kind of gross. I pretty much swore off butter substitutes at that point.
