So many things....
My POV as someone who is taking a Culinary Arts program that does include both a nutritional theory class, and a practical class dealing with healthier foods(in which we made fried shrimp[this becomes relevant later in the post]) and as someone who uses his brain on a regular basis:

She's hardly fat, unless you're the kind of guy who thinks ribs are healthy. A tiny bit overweight, as the average american is, maybe, at a stretch, but fat? Really?

fried shrimp was her family’s favorite meal.
There are so many ways in which this is potentially not an unhealthy meal. Factors include: Fried in what? Pan fried? Deep Fried? Served with what? Sauce? Type of sauce? Garnish? etc.

That's right michelle is blowing up like fat kid in a candy store.
Fat does not mean unhealthy. This is a common misconception, but no less incorrect for it.

“We can’t just leave it up to the parents."
The problem with her statement is that, as with all health professionals who advocate this sort of thing, healthy food is expensive as ****. This is the problem that needs to be addressed more than the parents themselves. Of course there are some parents who don't give a **** and feed their kids deep fried foods 3 meals per day, but not nearly even half of them. It comes down to cost, and sticking to a budget.

Well the saddest thing is that a fat woman is telling the rest of the country what it needs to do to get in shape.
Again, you'r misusing the word fat both in definition and context.
