Anyone got any interesting recipes using pumpkin? Not pie or bread or muffins or cookies...I'm all over those. Some sort of bars would be good. An entree might be interesting.

Just kidding, I eat nearly anything. Is that something you've actually tried? It doesn't sound all that appealing, but Hannah might be into it.

No, but its the only pumpkin food I know of besides pie and bread and seeds.

I'm really sorry, since you said no pies, but have you found and done a good pumpkin cheesecake? I LOVE pumpkin cheesecake!

Nobby's Winter-Warming Pumpkin Soup
1 Pumpkin
1 large onion
4 carrots
1 Red Capsicum/Bell Pepper
1 small red chilli
1 small piece of fresh root ginger
2 cloves garlic
1/2 pint Vegetable or Chicken stock
1/4 pint Fresh Cream

Burn the Red pepper and peel off the charred skin. Chop finely

Grate ginger & chop garlic & chilli (remove seeds if you don't like too much heat)

Chop onion, carrots & pumpkin

Heat olive oil & a knob of Butter in a large pan.

Before it's very hot, add garlic, chilli & ginger to infuse the oil

When it's hot, add the onion, carrots & Red Pepper. Fry for 5 minutes
Add pumpkin & Stock

Simmer 15-20 minutes. (If the stock is good quality you shouldn't need salt & pepper, but taste just in case).

Blitz with a blender and pass through a sieve. It should be a smooth texture.

Stir in fresh cream before serving with crusty bread.
A little fresh grated nutmeg on top doesn't hurt.

Don't throw anything at me Nobby, but I've only ever used canned pumpkin. If I'm buying pie pumpkins, is there anything I should know/do? Do you just "peel" them and then chop them up or what?

Taste Fresh pumpkin & you'll never go back :)

Either:

Slice off the top, scoop out the seeds, then with a robust spoon, scoop out the flesh in chunks.
Then hand Hannah & Smash sharp knives and make with the Jack o'Lantern

or:

Quarter the pumpkin, scoop out seeds and carve the flesh from the skin with a sharp knife

or (for extra flavoUr).

Quarter it, remove seeds and roast in a hot oven (drizzle with olive oil or duck fat) for 45 minutes then the flesh is soft, extra tasty. Reduce simmering time for the soup to 10 mins if you do this.

The trick with this recipe is:

1 - be cautious with the chilli & ginger - you only need small amounts for a nice 'afterglow' on the palate. Too much and it kills the flavoUr.
2 - Err on the side of caution when adding stock as the Pumpkin has loads of juice. If it's too thick when blended you can add stock. If it's too runny it detracts from the dish.

You should be able to find actual 'baking' pumpkins. If not at the grocery store at the veggie stand/orchard/farmers market. They're a bit smaller and thinner skinned - much easier to work with.

I've not tried it, but a co-worker was just telling me the other day that she makes a veggie pumpkin stew. Cuts the top off a pumpkin, cleans it out, adds stir fry type veggies and bakes the whole mess - right in the pumpkin.

Nobby's soup sounds wonderful.

I'll give it a shot, I love making soups and stews in the winter time. I generally alternate between a potato stew, a beef stew, a minestrone, and turkey chili...it'll be nice to try something new.

I loved this soup. It was made for me by my Lumbee co-worker back when I used to lobby on behalf of the tribes, and it was always a crowd-pleaser and easy to fix.

Not my recipe, but I found one you can use canned pumpkin in.

Three Sisters Soup.

The market next to us makes pumpkin ravioli with pine nuts. If you know how to make ravioli, then all you need is fresh punpkin, ginger, a little nutmeg. Cook the raviolis in boiling water for about 8 mins, then sprinkle with olive oil, pine nuts, and Parmesan cheese. It's weird but yummy.

Try vanilla ice cream with pumpkin seed oil.

They serve it at a somewhat fancy place in town, and it's delicious.

Not much to cook, and not truly pumpkin-related, but still awesome.


Don't use the cheap ice cream, please.

Jonwin bought some very tasty Pumpkin Bread from Whole Foods and pack it to enjoy today at the Faire. It had pumpkin seeds on top and just called for some thistle honey from the Bee Folks.

I'm normally not a big fan of pumpkin, but this bread was very mummy. Only time I enjoy baking pumpkin pies was when I used sugar pumpkins. Fresh pumpkin is so much better then can.

We got 4 jars of honey total this year and I can't wait to try making some honey mustard with the Radish Honey.

Wow, Nobby, we just had your Pumpkin Soup Recipe tonight and it was awesome. Danalog really liked it. I thought it was a bit too spicy for my tastes, but it was a winner all around. Thanks for the great recipe!

If locale permits, Ruby's Diner has a really tasty pumpkin shake that my wife goes gaga for every October. Of course that's not a recipe but I'm just trying to share the love.
