Might taste a little odd unless you used extra-light olive oil.

I'm surprised it would work, actually. I would have thought olive oil would taste a little burnt, but apparently it's fine.

You can, but don't. It will taste vile.

For cakes, Margarine > Veg Oil > Rat's Sputum > Olive Oil.

I have yet to personally test it, but a friend of mine made cupcakes awhile back and used soda (diet coke) instead of the normal egg, milk, and oil combo. Just the coke and the cake package. They were actually really good tasting, moist, and just pure yum. If you do white cake batter you use sprite. I still have to test it though

I've substituted it a few times baking. It will bake up fine. The cake might have a bit more of a savory taste. Also, it's an expensive substitute - try not to make a habit of it.

This...

You know how long it took me to convince my wife to NOT use extra virgin olive oil when she baked?

Yeah, olive oil is a no-no in cakes. Unless you actually really dislike your wife.

I use EV Olive Oil for dressing salads and stuff, Regular 2nd pressed oil for roasting & frying and Pizza Dough.

Also, for cakes, Duck Eggs > Hen's Eggs. True story.

As for the oil in the cake, it's partly that most olive oil's are too 'nutty' flavoUred (even light) and they are too low-temperature oils for an even bake.

Add me to the "not unless you dislike cake or your wife" camp. Honestly, it doesn't even work that well for cooking most things.

on the bright side, like ******** up the laundry, it has the potential of lowering her expectations of me further thus freeing me of the expectation of ever having to do it again.

For $20 I can ensure that this post isn't mysteriously e-mailed to her...

Today at least

You could have just left out the eggs and used mayo instead of olive oil.

Just add rum as substitute for whatever missing ingredient. If you substitute enough, she can have her cake in a glass.

Use a 15 oz can of pumpkin instead of any oil.

Your cake will be delicious, moist, full of fiber, and significantly lower in fat content.

This works especially well with double chocolate cakes, and spice cakes. It will turn a white cake or yellow cake a golden orange color, although it doesn't alter the taste too much.

I was going to ask Elne Clare to mix up a batch of hardtack for our display on the ship. Ill do it if she's not up to it.
Flour, water, a little salt. Bake at 200 degrees for 2 hours.
Useful for hammering nails, repairing concrete, and door stops.

Apple sauce also works. I had never heard of using pumpkin before, but it definitely sounds tasty.
