I Put on My Chef's HatFollow

And bake for Christmas. We always have Vinaterta at my Gramma's house at Christmas and since I've been away so long it's time I learned to make it for myself. That should be quite a hellish production.

Here's another Icelandic Christmas fave:

Pepper Cookies

INGREDIENTS
1 1/4 cups butter, softened
1 1/4 cups white sugar
3/4 cup light corn syrup
2 small eggs
3 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
2 teaspoons ground cloves
1 teaspoon ground ginger
1/4 teaspoon ground black pepper


DIRECTIONS
In a large bowl, cream butter and sugar. Stir in corn syrup and eggs; cream well. Sift together flour, baking powder, baking soda, salt, cinnamon, cloves, ginger, and pepper. Add dry ingredients to the butter mixture and mix until smooth. Refrigerate dough over night.
Preheat oven to 350 degrees F (175 degrees C).
Roll out dough to 1/4 inch thickness. Cut out cookies with a 2 inch round cookie cutter. Place at least 1 inch apart on cookie sheet and bake for 8 to 10 minutes in preheated oven.





Anyone have any good cookie, cake or Christmas dinner recipes - from stuffing to sides. I want 'em all. I'm cooking dinner here this year and I want it to be superyum!

Those little cookies that come in the tubes that have Christmas trees and such on them FTW.

I haven't tried this yet, but it's supposed to be pretty good. I think I am going to make it for Christmas dessert this year.

Cranberry Streusel Bars

Makes 24 (17/8-by-13/4-inch) bars

Cranberry filling:
1 12-ounce bag fresh or frozen cranberries (31/2 cups)
3/4 cup water
1 cup granulated sugar
Pinch salt
1/4 teaspoon ground mace

Bars:
1 cup firmly packed brown sugar
13/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
3/4 cup unsalted butter, room temperature (11/2 sticks)
11/2 cups old-fashioned (not instant) oatmeal, uncooked
1/2 cup chopped walnuts, optional

To make filling: In a medium saucepan, combine the cranberries (no need to thaw berries if they're frozen), the water and sugar. Bring to a boil over high heat, then reduce to a simmer. Cook, stirring occasionally, until the mixture thickens and the cranberries pop, about 5 minutes. Remove from heat and stir in the salt and mace. (Mixture will thicken as it cools). Makes 3 cups.

To make bars: Preheat oven to 375 degrees. Grease a 7-by-11-inch pan and set aside.

In a large bowl, combine the brown sugar, flour, baking soda, salt and cinnamon. Add the butter and, using your fingers, work together until no small lumps remain. Add the oatmeal.

Press and flatten half of the mixture into the prepared pan to form a crust. Bake for 10 minutes. Remove the crust from the oven and, while warm, spread on top of it all of the cranberry filling. Add the nuts, if using, to the remaining mixture for streusel and sprinkle it evenly over filling. Return to the oven and bake 25 minutes, until streusel topping is lightly browned. Cool pan on rack and cut into bars. Store in a covered container for up to a week or freeze for up to a month.

Not actually my recipe. I copypasta from the net because I usually just make them by just throwing in the ingredients. I also use cayenne pepper for a little more bite. Play around with it...I love pepper cookies!

I never cook for family gatherings. I used to all the time in VA, but no one in Joph's family besides the man himself has a taste for my cooking, I've found. They're meat and potatoes folk, and I'm lime and cilantro folk.
His sister uses the Williams-Sonoma cookbook and it's always delicious, but real heavy on the starches. We mostly make salads for the sides, and serve turkey with suckling pig.

I remember the absolute heartache I had the first Christmas away from my family after Ray and I got married. It was a fun-filled day with Ray and the kids and opening presents and whatnot, but every so often, my heart was twinging because I was so homesick.

I don't know what my family is going to do for Christmas this year. Since Hannah was born, I've insisted on being in my own home on Christmas morning, but we've generally gone to my parent's place the weekend before for Christmas with them. Since my dad passed away, I haven't gone there, and I think my mother is going to be at my sister's on the actual day. Holidays are weird when people die.

WELL! Now that we've totally ruined the fun spirit of Tare's thread, haha, I think it important to enjoy Christmas morning with a small cocktail of some sort. I like having a little Bailey's in my hot chocolate Christmas morning...it warms me up, haha. Not much of a recipe, I realize, but nevertheless.

I bake a wide variety of delicious cakes and tortes for Christmases. This year I plan on creating an anatomically correct Jesus Raspberry Linzer Torte with a giant fondant *****.

I would hunt down my ginger man recipe, for those who have a dough hook for their mixer, or willing to replace the wooden spoon, that always seem to break as the last cup of flour is mixed in.

I have neither, so have gone without for last few years. My arm gets sore just thinking about making these by hand.

I always love pepper cookies, but look for them to appear in the stores each year.

My dad still tries to make my mom's holiday favorite cookie. She would make rolls of cookie dough and then bake them fresh over the holidays.

BTW thumb, my first Christmas away, my mom call and told everyone not to show up for dinner. Her father was dying and she expected us to all have to travel to my Aunts flat in NYC in next day or so. I was just realizing that I had morning sickness then too.
