7/10/2006 - There are no obesity-causing bad foods, only bad eaters, according to the celebrated host of the Food Network's "Good Eats" and “Iron Chef America” Alton Brown.

The popular television personality addressed food and beverage manufacturers and food scientists at the recent IFT in Orlando, where he opened the show as Keynote speaker.

“Unhealthy food is the food designed to keep you away from good food,” said Brown, providing the example of a bag of 75 cookies that keep consumers from enjoying two better cookies made with butter.

“Food doesn't get up and jump down our throats,” he said.

Brown stressed the importance of communicating with consumers, claiming that food science is no longer just a scientific or academic achievement.

“You have to understand that [IFT's] place in the earthly matrix is changing. Your influence on food from a business or academic standpoint is no longer what your mission should be. Food is related to just about every single challenge people have living on this planet,” he said.

“The challenge for the entire science community is that the doors are all open. The [food science] community is no longer cloistered. You can no longer hide behind politicians and academic structures. If you are going to do your job you are going to have to learn how to communicate outside your field,” he added.

Known for his combination of science, history and culture in his presentations and publications on food processes, tools and recipes, Brown used his popular style to entertain the IFT's attendees and exhibitors.

Brown cautioned against an over-reliance on facts and information-overload and the use of high-tech props.

“I care about the big picture. While facts may be the ‘proof of evidence', they don't point to what we're doing,” he said. And what Americans are doing today is overeating.


Do you still blame specific foods for making people fat? I just ate a KFC Cheesy Potao Bowl and I feel like Shit. Maybe the Bowl was guilty of tasting so damn good by its my fault for eating it. Unless it contains addictive properties then it can't be at fault for making you eat it. I'm sure the ladies will say chocolate is addictive but there are other reasons why they love it when they are sad.

To me, it's always been about portion control. You can eat whatever you want, you just have to watch the portions and serving sizes. A serving size is not the whole package.

agreed. Everything in moderation. There is no reason you cant have a burger once in awhile from a fast food joint. One burger wont do much. Its the accumulation of calories when you eat it too often, along with the fries and soda. When you begin to eat that burger as a regular part of your diet, you will gain weight. Whose fault is it youre going there? Not the burger or the burger makers fault. Youre the one who go in your own car and drove your fat *** to the drive thru.

MSG is some addictive junk, and you'll find it in almost anything pre-packaged and salty.

I add it to my tongue bleed salsa when I'm feeling particularly evil. Having a small crowd sweating, munching, and cursing your name because they can't stop dipping is always good fun.

Alton Brown rocks in general. Im not fond of tv, and I dont (usually) cook, but every once in awhiel Ill sit down and watch his show. Hes very good at explaining whats going on and why and can make even me, a decent cook if I follow his directions

When you give people a "meal" that contains more calories than they should eat in an entire day, it's a problem.

True enough, but when sheep get loose and overeat they bloat and die.

When people get loose and overeat, we give them a motorized cart and the parking spot closest to the buffet.

Mash the avacado, add VERY finely diced tomatoes and onion (about 1 Tbsp per avacado used,) add approx 1 tbsp mayo or sour cream per avacado and season to taste with salt, chili powder and lemon and/or lime juice.

I tend to go heavy on the lemon juice and chili powder and use sour cream instead of mayo cuz that's the way I like it.
