If it had to be one and only one, I would probably go with Abbey Road or something similiarly all-embracing.

Abbey Road was my initial thought as well, because on a deserted island I think the orgasmic crescendo the second half of the album builds to would be the ultimate deterant to chewing of my own extremities. Unfortunately The Beatles just aren't edgey enough to garner respect aorund here.
It was the first one to pop into my head as well. The second side of the album (Here Comes the Sun and forward) is one of the finest examples of the sum being greater than its parts and is probably the finest lp side of its era.
Todd Rundgren's Something/Anything kept popping into my head too, but he's a little too mood dependent for me.
When I was milling over what to pick I was surprised how many of my favorites were immediatly eliminated for not having a lot of emotional range. There are tons of bands that have one or two modes of expression that they excel at. It's a rarity to find an album of anyone that is truly diverse.
I certainly wouldn't want to be stuck with only one album and have it be one dimensional, no matter how good it is.
Debalic mentioned The Kinks - To The Bone, which is one hell of a good one stop pick for the band and far superior to any best of or collection released of them. There's only one thing that sucks about it, it's inexplicably out of print.
