I went out to Wal-Mart to buy some high-def component cables for my PS2, for my Hitachi HDTV. Knowing Gran Turismo 4 and Tourist Trophy can both transmit in 1080i, I connect the audio, video, and s-video cables in. It transmits fine in its default mode, but when I switch to 1080i or 480p, the TV shows the "no signal" message. The game reverts back to normal after 15 seconds.
This is the first HDTV I've ever dealt with. I read on some forums that buying these cables would improve image quality - and it has. But I cannot get the TV to accept a HD signal from the PS2. I know it's capable of HD, as the high-definition channels on DirecTV come through correctly, and are noticeably better than their normal counterparts.
So, my question is - is there something I am missing, that I should be looking for as a rule for HDTVs in general? Obviously I can't expect everyone to just read my mind and know what my TV looks like, but has anyone else had any troubles with a Hitachi and trying to transmit HD through A/V/S-Video cables?

I went into the system configuration like you said, and switched that to 16:9. Went through everything else, and did not see a progressive scan option.
So I went into the game. Set to 16:9 there, and tried 480p, then 1080i.
The solution provided is not affecting the problem, unfortunately. Might there be anything else I might try? =/

Yes, but no PS2 games run at 1080 anyway.

Not that I'm aware of. Is it an older PS2? There are differences in the AV capabilities of the various revisions.

By default unless you change it PS2's are set at 480.

Are you sure your TV supports 1080i? Just because it's a HDTV does not mean it will produce a 1080i signal, some still use 720p and write it off as HDTV.
The PS2 model SCPH-50001 will do HDTV just fine however if you own a SCPH-30001 your pretty much sol.

S-Video is not Component, S-Video won't do HD.
