Is this a good pally tank helm?

I would lose some defense but could probably make up with gems.

I agree with Tellaria, Emblems of Triumph are so easy to get nowadays, there is really no reason at all to be picking up items that are simply not meant for your role. In a couple hours a day over the course of a week you can be completely decked out in full T9 and Triumph gear. I was a tank for a small casual raiding guild, and we'd run heroics daily to help catch people up in gear, and before I knew it I had a set of T9 for all 3 specs, plus the off-set items, so that should give you an idea of just how ridiculous it is to get gear now. Also, a good rule about tanking gear is if it doesn't have defense rating or dodge rating on it, it's probably not for you. I know I just stated the obvious, but there are tank items out there with no defense rating, but have dodge rating, and vice versa.
