I've seen 2 specs almost identical, one has Subversion3, and the other has Sudden Doom3.

Which talent should I use for Blood Tanking?

Well the real answer is that you can really use either, DK tank specs are not as rigid with their talent choices as other tank classes. I don't usually take subversion in my tank specs, but I usually do take sudden doom just because it's 3 points of free threat (that can proc on the cleave target too, not just your target). If I were to make a blood tank spec right now I would do something like this. However there are lots of things people do differently (for instance a lot of people take Hysteria to put on a dps), but this is what I do.

I'd probably do the same as Dill (but I have yet to actually use the spec to tank), with the exception that I'd put the point from Rune Tap into Hysteria. Of course, I'm only thinking in a Heroic context. Raid and Heroic specs, realistically, have a few differences (and if we look at specific raid encounters, they change even more). It's just so fun to see what happens when you put Hysteria on a DpS. :P And it can be VERY helpful on some bosses in Frozen Halls, since you probably will only get off 1 (at max 2) Rune Taps in that time, but bumping 4K DpS to 4.8K DpS does mean 30K more damage in 30 seconds, which can mean a noticeably faster fight (especially if you end up groups like I do, where you have one 4K DpS, then you are the second as the tank). If the other three manage 6K DpS, that's still 5 seconds faster. Lately, it is rare they do for me (usually about 5 or so, including my DpS).

Also one note, Spell Deflection is unusually helpful in Frozen Halls, where MANY trash packs and some of the bosses have hard-hitting spells. But a skilled group (and tank) can interrupt many of these, and there is still only a 20% chance or so to mitigate the damage. It can be considered, though. Especially if you don't have hate problems, but you have some severely stressed healers in those instances. If you don't use your second spec (and already have DS) you may want to consider making a second tank spec that specifically takes it over SD just for those. Most notably, the trash packs after Ick in PoS.

[EDIT]

I as stupid and fixed something.

Ya I wasn't even considering rune tap, I was talking bout Subversion versus Sudden Doom, does the death coils out weigh the upped damage?

You crit so little while tanking (I have easily less than a 10% chance to crit) that it's better, in my opinion, to forgo anything related to crit while tanking (except if you want to go rune strike glyph) for other things. Overall it doesn't make too huge a difference either way, you can't really go wrong choosing one over the other, I just prefer sudden doom.

Lower crit actually makes the talent much better in terms of the % of crits it results in for tanks over DpS, though. Personally, I like more guaranteed DpS (which is why I don't like the idea of Frost DpS.

But I agree with Dill--I'd go SD.
