I have a low level shaman that I am starting to really like. It is enhancement spec and I have the shoulder, and chest heirloom pieces. What weapon or weapons should I get to use for leveling? Not sure if I should wait to get them when I am able to dual wield.

Wait for dual wield...you'll be spending a lot more time in the 30-80 stretch than you will in the 1-30 stretch. (And even if my level ranges are off and dual wield comes at 40, the end result is the same...you'll spend more of your leveling time to 80 dual wield than you will wielding a 2h weapon).
