I was wondering whether you guys could give me some advice on what trinkets i should be using.

At the moment i have:

Dying Curse
Eye of the Brood Mother

Is it worth replacing eye of the brood mother with the new emblem of truimph or Mithril Pocket Watch Trinket?

The Mithril Pocketwatch is exactly the same as the item level 200 Sundial of the Exiled trinket that can be purchased with Emblems of Heroism. It is not better than either of your current trinkets.

The only applicable trinket purchasable with Emblems of Triumph is the Shard of the Crystal Heart, which is another +hit trinket. Unless you were really hurting for hit, you wouldn't stack this with Dying Curse. Given the amount of +hit itemized on the majority of the caster dps gear from TotC, you probably would not need both trinket slots to have +hit passive stats. Now, surprisingly, I believe that (unless you really needed the extra +hit on the EoT trinket) Dying Curse has been calculated to still yield higher dps with its proc than the on-use haste effect of the Shard of the Crystal Heart. This will depend on your individual spec though.

I got the Talisman of Volitile Power yesterday from totc 10 man. WOuld this be better than eye of the brood mother?

The problem with that trinket is that in order to get the full benefit from it you have to cast so many spells, and by the time you cast all those spells you have very little time left on it. The only time you can cast fast enough to get good use out of it is during heroism, however you'd end up hitting the gcd cap and it would go to waste anyway.
