Based on your gear alone, you should be just fine. I started with under 30k health and mostly ilvl 200 with a few 213 pieces. Even with equally geared healers, you should still be ok. Of course, this is all assuming you guys are good at what you do.

Bah that's always annoyed me, people who use double stam trinkets then gem for defense.

Your gear should be fine to start tanking ulduar, I started tanking it in full naxx10 gear, with my only 213 pieces being the badge cape/ring. Oh and I'd suggest you replace your gem in your sword to something more useful such as stam.

Your gear is fine. Your gems are pretty suspect tho. General rule, never gem for parry(basically your dodge needs to be about 8-9% more than parry to even think about gemming parry). All of your dragon's eyes should be stam. +10stats to chest is bad, do +20 def so you can swap a def gem to stam. Your one red gem should be agi+Stam or dodge+stam.

It's a good idea to pickup Judgements of the Just as well, drop a point from benediction and divinity. And unless you're running with a ret pally full time, i'd drop divinity completely to pickup Heart of the Crusader.
