Hello, I recently dinged 80 on my DK and I have been running ToC and H ToC a ton to get some raiding gear. My tanking weapon ATM is a green 2-H sword with Str, Stam and Def. Is there a preferred non-raiding tanking weapon? Most of the weapons I seem to find are DPS or One-Handed....

Nope. I'm running around with a level 78 green 2-handed axe that has +def on it, at the moment. Actual tanking 2-handers (with stats like defense, parry or dodge) are extremely rare. There is one random BoE drop from Naxxramas 25, if I'm not mistaken. You're best off to either grab a greenie with defense or, if your avoidance/uncritability can take it, a 'neutral' 2-hander with nothing more than heaps of strength, stamina and/or attack power.
As noted, there are no real 2-H tank weapons in game. End game tanks either go with high Sta weapons, or DW the noted tank weapons. These weapons (http://www.wowhead.com/?item=43281, http://www.wowhead.com/?item=38618, http://www.wowhead.com/?item=43409, and http://www.wowhead.com/?item=37653) drop from heroics, which you should be able to get as a DPS.Add a Rune of Stoneskin Gargoyle, and your ready to go.
You should really just try and get the best DpS weapon you can. If it has Stamina on it, bonus.
Strength gives you some Parry, so basically any wep you use gives a miniscule amount of tank stats.
Since your gear is going to be very tank based, the weapon slot is a great place to stock up on stats you are missing, such as:
Crit, Hit and Expertise.
Now, the only one that has any real bulk to a tank is Exp (though Unholy likes Crit a lot). But the other two can be used to help you decide between two weapons.
For intro to tanking, pick up a Titansteel Destroyer. They're a little expensive, but you can do what I did--mine all my own titansteel. Buy/farm the other mats and tip a BS to do it for me. Works out to be slightly cheaper in the end (mat price to TSD price).
I don't know what race you are, so I'm not sure which weapons would be best (that 3 or 5 exp can be very nice, as long as you don't sacrifice a bunch of other stats for it). The TTS Destroyer will probably last you a while, either way, unless you are really lucky. It's basically better than anything you'll get in Normal mode instances.
