Without even trying i managed to maxx and surpass the expertise rating. I think i need about 26 because I'm an Orc Rogue with fist weapons and i have about 34 (perhaps even 36). I'm doing these numbers by memory as I'm not at home right now. It's enough to drop one point in weapon expertise, i checked this yesterday night before logging off. Sadly i logged off in my PVP gear so i can't link it to you.

If i remove one talent point from weapon expertise, what do you guys think i should put that 1 talent point into? The only thing i can think of is perhaps putting that extra point in endurance so i still have 50 points in combat for Killing Spree. Or i could go for Unfair Advantage but I'm not getting hit, so that's also kinda meh...

I'm using the standard 15-51-5 combat spec.

This is the only (good) option right? I'm not missing anything?

It's probably easier and better overall to nix some of the gear that's pushing you way over the cap instead of worrying about your talent points. It's unlikely all your other alternatives are going to be substantial downgrades so I'd shop around. That's not to say being over the 26 "cap" is useless as you still get benefit out of it, but the only benefit you get is lowering parry chance against you which doesn't help since you should be attacking from behind anyway (in an ideal situation at any rate even though most situations are less than ideal) so the points are kind of wasted. I would personally experiment with different sets of gear and different talent point combinations until you find a happy medium.

Remember that while cookie cutter builds are cookie cutter for a reason 99.9% of the people you encounter wont give a **** about your point arrangement as long as you make the mobs dead in a reasonable manner (as in acceptable DPS for your level, gear, and the situation at hand).

FYI: Endurance wont help you for the same reason Unfair Advantage wont. You need to be getting hit for the extra stamina and the lower Sprint/Evasion cooldowns to matter any so I wouldn't bother even considering moving points into those. They're even less useful than excessive Expertise.

The armory may be down because our server is undergoing extended maintenance.

Stats:
3627 ATK, 489 hit, 37% crit, arpen rating 273, 31 expertise.

Gah! Still wearing my PVP boots, total is around 3667ATK, 511hit, 37%+ crit, probably same arpen, probably the 34-36 expertise i had in my mind.
