I have been looking but can not find an equipment guide, but my main question is maces. Is mace a good choice and if so when do we get our first good Mace? I am 59 DK.
A. Train all your weapons. That way, whenever a good drop comes along, you can use it ASAP.
B. There is nothing wrong with Maces. One of the best weapons for breaking into endgame heroics is a 2-handed mace.
C. While leveling, just take the quest rewards and drops you get. Don't bother grinding for items or running instances, unless you actually want to run it.

For leveling, I always keep an eye on Kaliban's loot list but I won't farm an instance for a particular item until you get up to 80. I won't link the site here as they have gold buying advertisements so you'll have to google it yourself.

Hmmm.... When looking for level appropriate weapons I use wowhead and their fantastic search filtering utility. For instance here's a search of 55-65 quest reward weapons you might find useful.
I started making a new stat weights list for Northrend but got distracted. I also found that stat weights change too much depending on other gear to make static lists really all that useful. Here's my old one for some examples of what you're looking for in a weapon.
