When you use Guardian Spirit and the person dies they remain alive with 50% health.
My question is will it also reset hate, or does it act like they never dies and they keep their hate level?

It has no effect on threat level, technically speaking the target never dies. Also, that would make it a thoroughly useless spell.
Useless is a strong word. You'd just use it to save DPS asses rather than tank asses. But aye, it wouldn't even have half of the usefulness it currently has.
