Am I ready?
I have 766 resilience, 30% crit, and 3400 (4400 with Anvil of Titans proc) self-buffed.
Am I at the point where I can start taking Arena seriously or should I gear up a bit more?

Your resillience is good, your AP is low.
I'd say that if you have any resillience gems switch those for Agility gems.
Other then that, you're not going to get much better without luck in VoA/1600+ rating so I'd say you're ready.

If I did that that would bring me to ~680 resilience, is that an acceptable trade off?
I'd say that as long as you stay around 725 you'll be fine.
Although if you're going to be playing SV/Hpal/DK you might as well stack stam and resillience for all your worth as you'll be the target of choice vs pretty much anything.
Edit: for comparison, with all the honor bought gear and some 10 man epics, I'm at 720 resillience, 21.somethng k hp, 32ish % crit and 3.7k AP in PvP gear and spec.
And I'm assuming that you are specced 0/15/56 with Wyvern, Monkey and disengage glyph.

Why would you want hunting party for Arena? Seems like a waste of talents to me.
For you and your healer, because you can run out of mana really really quickly.
Especially when there's a warlock (ugh.. hate warlocks), a priest or another hunter who can drain.
If you check the video's of the 3v3 tournament from not too long ago, you see that even in ~2 min matches people run OoM.
