Yeah, you can find a specialized shop for anything in NYC.
That said, delis, butchers, bakeries, and farmer's markets aren't terribly uncommon outside the city. Groceries are vastly more common, yes, but you'll still find these.
Specialized cheese shops you're unlikely to find outside of an urban area, though. Ditto for beaneries, tea shops, etc.
And in the end, nearly everyone buys most of their groceries from a... grocer. The other assorted shops are more supplemental, or for when you're looking for something really high quality. For instance, if you want a pork chop, you can get it at the local Shop Rite. If you want wild boar (or, I guess, I really nice pork chop), you're going to need to go to the butcher. Or, I don't know, rabbit. Never seen rabbit in the grocery, but I'm sure the butcher sells it.
