Curry is awesome.
Take onions and garlic and sauté in olive oil.
When soft add some fresh ground cumin (doesn't have to be very finely ground, I usually just crush it) and fry for a bit
Add in flour to make a roux and fry a bit more to cook down the flour
Add coconut milk, juice and zest from a lime or two, some kind of relatively mild cheese (I just used mozza cause it's nice and gooey), and some chilies or Sriracha (if you want)
Cook until it thickens.
You now have awesome curryish mac and cheese, assuming you're serving it with pasta.

Olive oil... curry... hmm.
I don't know. I wouldn't opt for pasta in a dish that would work just as well with rice, but that's just me.
My boyfriend likes to put garam masala on pasta lately. I'd rather just go with pepper and chili and a little butter in that scenario myself. I've actually got a roommate who only eats his curry with pasta or naan, and we don't really make naan when we cook curry. I think it's weird.
