I've been out of the game for about 5 months and just barely got back into it with my warrior.
I was a tank in TBC and for the most part knew my stuff as far as stats go and how well geared I needed to be to start kara I.E 490 defense and around 13k hp to start but now I'm totally new to Wotlk and was wondering what the minimun stats were for 10 naxx and such and what gear from what instances would beable to provide that gear to start as a OT. Any info would be helpful thanks

The magic defense numbers to be uncrittible are 535 for heroics (level 82 bosses) and 540 for raids (level 83 bosses). The stat basics are basically the same as they were before, defense then hp/ac and a good amount of avoidance.
I really like tanking, even more so in WoTLK. Warriors were given more abilities to handle aoe pulls, which are a lot more common in wotlk. Right now most players are foregoing CC and just taking everything on at once.

okay thanks for the defense info so what about avoidence what should my dodge/parry/block be at for OT and the minimun I should have for HP
As a new offtank for Naxx 10 a 23.500 HP is not bad. Potions , food, flasks and buffs can increase your HP greatly....plan on getting as much HP as possible to help your guild as an offtank. Craft Helmet /boots/shield. Enchant with cheap +18 stamina.

23,500 is plenty to main tank Naxx. The second you're at 540 you're safe to step in just as long as you know what you're doing. Whether the rest of the group is able to do their job is what will complicate things.
I would suggest looking into the crafted blacksmithing gear. There is a lot of +def on the tempered saronite stuff and the epic tempered titansteel stuff is pretty standard for most newly 80 tanks.
540 def - 20k+ hp - 30%+ dodge/parry is what I went into Naxx10 with as a MT (they were desparate). I would say those stats are much better suited to an OT though.
