I am a paladin, and a miner, so if I can get up to 205 eng, would this helm be any good or a waste of time?
On the one hand, I wouldn't bother with it. Mining has never seemed hard to skill up, and wow, a chunk of stamina. No other stats/ Doesn't seem worth it to me.
On the other hand, leveling faster might make it more difficult to keep your skill maxed if you're focusing on leveling and not going out of your way to mine as you level.
Really comes down to though whether or not you feel it is worth the time/mats to make. Each person will think differently about that (I never used the +enchants to gathering skills either).

I would suggest not going for it. If you're already set on Mining/Engineering, you could use it and the gloves enchant for +10 mining, but other than that, the helmet is a waste. And leveling Engineering just for that helmet is insanity.
You don't need it.
Mining skill is easy to level unless you are simply extremely lazy.
Unless you have the mats laying around - buying/grinding them would be a waste of time. Most people just race through old content.
