Hey all,
Due to tanking needs for my guild, I have decided to drop my dps roll and pick up on tanking. The gear I have thrown together is mostly beginner gear and I am going for upgrades. Right now I sit at 653 def. This is close to the cap, but not quite there. When I get my ring I should hit cap. Is this def. good enough to run heroics/ OT voa with good healers?
Also, what are some minimum stats for naxx 10, 25 and OS 10 and 25 for MT and OT?

653 def??? and you are on beginner gear? the def cap is 540...so I'm thinking that you did a typo there.
The critical strike immunity cap is 540 at level 80. It's not "def capped."
540 defense is generally considered the first stat that raid tanks must get before raiding. After which avoidance stats, stam and threat become most important.

For Naxx, if I recall, you want 20K Armor and 22K Health UNBUFFED.

Yea what I posted was def rating not skill. 540 skill is uncrittable and I am slightly short.

535 for heroics. It's based on boss levels. Heroics have level 82 bosses. Raid bosses are level 83. That's where the numbers come from.
If you're at 535 then start hitting heroics, as long as your other stats are good enough. At 535 your other tanking stats should take priority. Worry about the 540 when you're actually getting closer to raiding.
