At what point in time do you stop stacking spell power?

My spell power is now 1926 non buffer.

I have started to gem for crit(Holy) spec. At about 9%(14% with talents)

I use a flask of mojo when raiding which get me to about 270 mp5 while casting and mana really is not an issue.

My haste is 0, but with the next upgrades I am going for this will start to climb.

Is their a point in time where spell power starts to lose its effectiveness?

If I gemmed for more spell power I could come close to 2000+ none buffed.

You never stop stacking spellpower, but you do need to balance it with other things. If you've got that much spellpower and no issues with regen, my guess would be you're trading off a lot of int for it, which can be a problem for both your mana pool and your crit. A big mana pool is your friend. And 14% Holy crit is fine, especially if you're going to buff it with food and/or have a moonkin in your party, but I'd rather be closer to 20% myself. Crit is a huge mana saver for Holy.

But only you can decide what you're trading off for spellpower and whether it's worth it. If you're not having any problems at all and don't see anything that needs tweaking, then continue as you are. But if you find you want more int, crit, or haste, at this point you can probably afford to trade a little spellpower to get it.
