My ret pally alt has been levelled up to 48, but now I'm toying with re-speccing to holy and giving pally healing a try.
The problem is, I haven't built up an off-set and so all my gear is ret-oriented, although I do have a fair bit of intellect.
How quickly will I go OOM if I try to heal a 5 man in my ret gear? Will I be able to get through healing 5 mans by just throwing on a few +int cloth items in the short-term?

I healed 5 man BF in Outland around 60'ish, although I was ret specified. I was quickly OOM and couldn't keep the tanking DK alive.
Probably best if you start accumulating some int items. You'll soon be at a level where Outland and Northrend greens will suffice or concentrate on accumulating more appropriate kit if you decide to stick with it. May take a tree change as well.
Have a read of the Holy Pala sticky at the top of this forum, there's some good pre-high level pointers in there as well.
