I guess it depends on playing style, but some people like to enjoy the way to endgame by experiencing the lower levels more slowly. In the end, we're all doing the same thing, it's just a matter of whether we have an "80" next to our name, or a smaller number.
I just like group content better. I'd rather take twice as long leveling in instances than spend half as much time questing.
Sadly I can't farm my levels as easily in pre-WotLK stuff but I try to run each dungeon at least once. I believe I ran BRD twice and Scholomance once the last time I leveled a toon to 70, which was my rogue (my DK doesn't count yet, all I've done on him since finishing the starting quest chain was to level mining and JC and I'm still not ready to move on to Outland on him). Those are kind of hard to find groups for these days. I do know that I spent the majority of 60-70 on my rogue in instances.
For an example, my warrior hit 80 before finishing questing in Grizzly Hills. That's because I spent a lot of time in instances. My hunter is even worse, I'm already practically level 77 and I'm not even finished with Howling Fjord yet. I ran DTK four times at least, VH a few times, Gundrak a few times, now I'm looking for groups for Halls of Stone which I'll run a few times as I love that place.
